The names of the 15 Galician restaurants with a Michelin Star were announced last Tuesday, with the addition of Auga e Sal in Santiago de Compostela. The recognition of Galician cuisine, however, does not stop, and the guide has made public the names of the 24 places that have obtained the Bib Gourmand award.
Michelin Guide Spain & Portugal 2022 has 284 establishments on this list after the incorporation of 43 premises, three of them in Galicia. The restaurants that can already boast of becoming part of the prestigious list are El Ceibe, in Ourense, and A Viaxe and Anaco, both in Santiago de Compostela.
But what is the importance of this recognition? The Bib Gourmand identifies the places that offer the best value for money in the guide. These establishments "never disappoint" and offer consumers the chance to enjoy quality food at "contained" prices, according to the guide itself. This establishment has been delighting the palates of its customers for more than three years in the place previously occupied by Luis Veira's Árbore da Veira. «A place with a modern line that everyone talks about, because in it they try to offer an elaborate cuisine although somewhat more informal, based on light dishes but... tremendously tasty!». This is how the Michelin Guide describes Terreo, a “casual cuisine” venue located in A Coruña that has chef Quique Vázquez in charge of the kitchen and Ana Señarís as head of the room. The Michelin Guide recommends it to those who want to live a culinary experience, as it recreates a modern, casual and informal atmosphere. «Its offer revolves around two suggestive menus that complement each other: a short one with seven tastings and a long one with three more dishes, all faithful to a modern cuisine that draws on both the Galician tradition and the excellent fish and shellfish of the area », indicates the guide, which highlights the possibility of pairing and recommends booking.
“Wonderfully unique, as it presents an interesting gastronomic offer and recovers a portion of its long history for Santiago”, is how the Michelin Guide describes this business that occupies a house from 1640 that always welcomed the musicians of the Compostela Cathedral. The bar is made of raft beams and the interior has many details reminiscent of the old beach huts and a greenhouse-type room, as well as an orchard-garden. The menu is not very extensive but it contains up-to-date traditional Galician cuisine, and you can also choose between two tasting menus. Francisco Domínguez's grandparents set up this family business in 1975 and the now owner has adapted it to the new times. A single current tasting menu from Monday to Friday, based on local and seasonal products, as well as a complete brunch on weekends«, indicates the Michelin Guide. The prices of this modern proposal vary between 32 and 35 euros.

Morrofino proposes current, technical and fun dishes with creative overtones and details of street food that respect traditional flavors. "On the menu, well supported by a tasting menu, you will find dishes to share and attractive preparations that, in some cases, look to other countries through interesting fusions," explains the Michelin Guide. The price varies between 35 and 42 euros per person.

This family restaurant in which the diner can spend between 15 and 50 euros on average, makes a gastronomic proposal closely linked to the sea: its name, in fact, refers to the art of artisanal fishing most common among sailors in the area.
